Serves 8
Prep Time: 15 min
Total Time: 15 min
Ingredients
2/3 cup sliced strawberries
1/4 cup balsamic vinegar
1/2 shallot (the white bulb of 1 or 2 spring onions would be a good substitute)
A small squeeze of honey (scant teaspoon)
1/4 cup water
1 scant teaspoon fresh thyme leaves
1-1/4 teaspoon Dijon mustard
1/4 teaspoon ground black pepper
Instructions
Combine all ingredients in blender and blend until smooth.
Notes
Their original recipe is only 15 calories per serving, but my added honey bumps it up to 18 calories per serving. Whole Foods recommends using it as a dressing over spinach and arugula, and they say it makes a tasty dip for pear or apple wedges or raw veggies.
